Made with 100% rye flour (partial light rye, partial whole rye), this wheat free bread undergoes a long sourdough fermentation period, making digestion easy. Long fermentation also results in reducing sugar levels from the flour. The Russian is a dense bread, but not as heavy as the Danish. The whole rye present brings many healthy fibers. Can be compared with a "Original German Pumpernickel" bread. VEGAN
